Definition
The curing barn, a tall wooden structure with a thatched or metal roof and adjustable doors and vents used to control airflow and humidity. Barns are sited and oriented so prevailing wind can be let in or shut out as the cure demands, and leaves hang in tiers on poles called cujes.
Why it matters
The barn is the first place a crop can be ruined or made: too much air and leaves dry green, too little and they rot on the pole.
