Yellowing

The first stage of curing, in which chlorophyll degrades and the leaf turns from green to yellow while still holding most of its moisture. It typically runs several days to about two weeks under warm, humid barn conditions.

Rushing this stage locks green, grassy flavor into the leaf; holding it too long invites rot, so barn crews manage doors and vents around it constantly.
