First Fermentation

Definition
The initial fermentation done shortly after curing, usually on the farm and often with the leaf still in hands and on the stem. It is comparatively short, from a few days to a few weeks, and is run at moderate temperature to drive off the worst of the ammonia.
Why it matters
This stage removes the crude edge that would otherwise be locked in by later processing, and skipping or shortening it shows up as harshness years later.
